So good you can’t stop making them
Super soft, incredibly fluffy, and made with almost no effort. This easy Scandinavian butter bread is your go-to recipe for last-minute brunches, quick lunches, or unexpected guests. I love these topped with homemade jam, chopped strawberries topped with sugar, or just plain with ham and cheese <3

Ingredients (15 bricks)
- 50 grams fresh yeast (or 20 grams active dry yeast)
- 1 dl milk of choice
- 1 tsp salt
- 1 tsp sugar
- 1 egg (in the dough) + 1 egg for brushing the dough
- 100 grams softened butter (leave outside of fridge for some time)
- 5 dl flour (+1 dl if needed)
- Seeds of choice (poppy seeds, sesame seeds, etc) for topping
- Optional: add 1,5 dl oats (+ 0,3 – 0,4 dl extra milk) for more filling bricks with higher fiber content
Instructions
- In a large bowl, combine cold milk with the yeast. Mix
- Add 1 egg, salt, and sugar. Mix
- Cut the butter into smaller pieces and add to the mix. Add the flour
- Knead until the dough is smooth and somewhat elastic. This can be done with the dough still in the bowl for an easy and fast approach!
- Let the dough rest for a few min, then roll out on a lightly floured surface into a long rectangle of around 20x60cm.
- Brush the whole surface with whisked egg, then fold the rectangle like an envelope (one long side folded in 2/3 and the last 1/3 folded on top). You now have a long log with the “seam” up. Turn it around so the “seam” is towards the counter
- Once again, brush the top with whisked egg. Spread whatever seeds you like on top (poppy seeds, sesame seeds, etc)
- Use a knife and divide the dough into equal scares of around 5 cm in width. Place them on a baking pan and let rest for 10-20 min
- Preheat the oven to 225 degrees celsius. When the oven is warm and the dough has rested long enough, bake the bricks for 8-10 min (until golden brown)
- Let cool for some minutes before serving. Enjoy <3
